What if there is no category that describes the quiz I want to create?

No problem, we leave category creation to users. When you create a quiz, the very last option in "Category" choices is "Add". Choosing that option will show new field for category creation.
NOTE: We may rename categories, as well as move quizzes to a different category if we feel like it belongs there, or to maintain better cataloging experience.
